  • Kid Sushi Style Rolls
    • 2 slices white bread, crust removed
    • Half a 6oz can tuna
    • 2 tablespoons mayonnaise
    • 1 ½ tablespoons Ketchup
    • 2 drops Tabasco sauce or Siracha sauce
    • 2-inch piece of cucumber, cut into strips
    • 2- inch piece of carrot, peeled and coarsely grated

     

    1. Using a rolling pin, flatten the bread until its about ¼ inch thick.
    2. Mix the tuna together with the 1 tablespoon of mayo, the ketchup and the Tabasco. Spread the remaining 1 tablespoon of mayo over the bread and then spoon the tun in a line about ½ inch from the edge of each slice. Align the cucumber strips on one side of the tuna and the grated carrot on the other side. Roll up from the filled end and press down to seal. Trim the ends to neaten using a sharp knife, then cut into three little rolls.
  • Oven-Baked French Fries
    • 2 tablespoons canola oil
    • 1 cup flour
    • 1 teaspoon garlic powder
    • 1 teaspoon black pepper
    • 1 teaspoon onion powder
    • 2 eggs, beaten
    • Salt to taste, if desired
    •  4 medium potatoes, scrubbed and rinsed
    •  Canola cooking spray

     

    1. Heat oven to 450 degrees. Coat a baking sheet with a tablespoon of canola oil.
    2. With a fork or whisk, mix the flour, garlic powder, onion powder, black pepper in a shallow dish and set aside. Place the beaten eggs in a separate small bowl.
    3. Cut the potatoes into ½ inch thick wedges. Dip each wedge into the beaten eggs, then the flour mixture, making sure it is will coated. Place the coated wedges on the prepared baking sheet and let sit for 10- 15 mins.
    4. Coat the tops of the potatoes wedges generously with canola cooking spray. Bake in the center of the oven until golden brown (15-18 mins), flipping after 10 mins.
  • Camp Fire Mac and Cheese
    • 1 pound of elbow macaroni
    • Water to cook the macaroni
    • 2 ½ - 3 cups milk
    • 2-3 cups shredded cheddar cheese
    • 12 Ritz crackers (crumbed in a sandwich bag)
    • Pepper and paprika to taste

     

    1.  You need an adult to help with this recipe.
    2. Have experience with campfire or WisperLite cooking. If you don’t have experience with one of these cooking methods you might want to cook this mac and cheese in the comfort of your own home.
    3. Cook the noodles according to the package directions.
    4.  Strain the noodles. Keep the noodles in the same pan and add the milk, place back on the fire, add the cheese and stir like crazy. Add the pepper and paprika. Top with Ritz cracker crumbs and enjoy being outside.
